INGREDIENTS

1 roma tomato, diced

1 large avocado, diced

1 cup green bell pepper, diced

½ red onion, diced

1 ½ cup corn

1 can Falesca White Cannellini Beans

1 can Falesca Black Beans

1/3 cups chopped cilantro

¼ cup + 2 tbsp Colavita Mediterranean Extra Virgin Olive Oil

3 tbsp Colavita Red Wine Vinegar

2 tbsp lime juice

2 tsp honey

1 clove of garlic

1 tsp oregano

Salt and pepper to taste

Tortilla chips to serve

INSTRUCTIONS

  1. Finely dice tomatoes, peppers, onion and avocado
  2. Drain and rinse your beans
  3. In a mason jar add olive oil, red wine vinegar, lemon juice, honey, garlic, oregano, salt, and pepper
  4. Add all vegetables and beans to a bowl and pour dressing
  5. Let the salad rest in the fridge for 30 minutes and toss again before serving
  6. Serve with torilla chips
