INGREDIENTS

FOR THE SALAD:

1 pack Auga Organic Double Steamed Brown Lentils

1 head of kale

2 cups cubed squash

1/2 cup crumbled feta

1/4 cup pomegranate seeds

2 tbsp Colavita Extra Virgin Olive Oil Premium Italian

salt & pepper to taste

FOR THE DRESSING:

1/4 cup Colavita Extra Virgin Olive Oil Premium Italian

1/4 cup De Nigris Organic Apple Cider Vinegar

1 tbsp honey

1 tsp Colavita Roasted Garlic Paste

1/4 tsp chilli powder

1/4 tsp smoked paprika

salt & pepper to taste

INSTRUCTIONS

  1. Preheat the oven to 400°F/ 200°C
  2. In a large mixing bowl, toss together the squash, olive oil, salt, and pepper. Transfer to a baking sheet and roast for 30 minutes until tender
  3. In a mason jar, add olive oil, apple cider vinegar, honey, garlic paste, chilli powder, smoked paprika, salt and pepper.  Cover with lid and shake well
  4. In a large serving bowl, combine kale, lentils, roasted squash, pomegranate seeds, and feta cheese
  5. Drizzle the dressing over the salad. Toss to combine and serve!
