    INGREDIENTS

    2 packs Auga Double Steamed Lentils

    1 cucumber, diced

    1 red onion, sliced

    3/4 cup mint leaves

    1/2 cup Falesca Sun-Dried Tomatoes

    3 tbsp Colavita Mediterranean Extra Virgin Olive Oil

    2 tbsp lemon juice

    1 tsp dijon mustard

    1 tsp Colavita Roasted Garlic Paste

    salt and pepper to taste

    INSTRUCTIONS

    1. Mix olive oil, lemon juice, garlic paste, mustard, salt and pepper
    2. In a bowl put lentils, diced cucumber, red onion, sun-dried tomatoes, and mint
    3. Pour the dressing over the salad and serve!
