INGREDIENTS

500g La Molisana #65 Orzo

1 jar Falesca Organic Whole Roasted Peppers

1 cup cucumber, cubed

3/4 cup red onion, diced

2/3 cup Falesca Pitted Green Castelvetrano Olives

2/3 cup Iliada Kalamata Olives Low Salt

1/2 cup feta

3/4 cup Colavita Mediterranean Extra Virgin Olive Oil

1 tbsp Falesca Capers

1 cup Falesca Marinated Artichokes

1 lemon, juiced

1 1/2 tsp oregano

1/2 tsp salt

1 tsp black pepper

INSTRUCTIONS

  1. Bring a pot of water to a boil, season with salt, and cook the orzo for 10 min
  2. Chop up the vegetables while the orzo cools down
  3. Transfer the orzo into a large bowl and add in all the vegetables, then crumble half of the feta
  4. Whisk together the liquids and seasonings, then drizzle the vinaigrette over the salad
  5. Toss until the salad is evenly coated and add in the remaining feta
  6. Refrigerate for an hour or overnight before serving
