INGREDIENTS
500g La Molisana #65 Orzo
1 jar Falesca Organic Whole Roasted Peppers
1 cup cucumber, cubed
3/4 cup red onion, diced
2/3 cup Falesca Pitted Green Castelvetrano Olives
2/3 cup Iliada Kalamata Olives Low Salt
1/2 cup feta
3/4 cup Colavita Mediterranean Extra Virgin Olive Oil
1 tbsp Falesca Capers
1 cup Falesca Marinated Artichokes
1 lemon, juiced
1 1/2 tsp oregano
1/2 tsp salt
1 tsp black pepper
INSTRUCTIONS
- Bring a pot of water to a boil, season with salt, and cook the orzo for 10 min
- Chop up the vegetables while the orzo cools down
- Transfer the orzo into a large bowl and add in all the vegetables, then crumble half of the feta
- Whisk together the liquids and seasonings, then drizzle the vinaigrette over the salad
- Toss until the salad is evenly coated and add in the remaining feta
- Refrigerate for an hour or overnight before serving
