INGREDIENTS
1 tbsp Colavita Mediterranean Extra Virgin Olive Oil
2 tbsp unsalted butter
1 yellow onion, peeled and minced
1 clove of garlic
2 cans Falesca Romano Beans
1 1/2 tsp chili powder
1 tsp smoked paprika
1 tsp ground cumin, or to taste
1/2 tsp dried oregano
1 tsp salt, or to taste
1 tsp black pepper
2/3 cup broth (vegetable or chicken is good)
1 tbsp lime juice
INSTRUCTIONS
- Heat olive oil and butter in a large frying pan over medium heat.
- Add finely minced onion and cook for about 5 minutes, until soft and translucent.
- Add garlic to the pan and cook for an additional minute.
- Add the romano beans, along with chili powder, paprika, cumin, oregano, salt, and black pepper. Stir everything together
- Pour in broth. Bring the mixture to a simmer and continue cooking for 7 to 8 minutes, occasionally stirring
- Remove the pan from heat and add the remaining butter and the juice from a lime. Mash the beans until you reach your desired consistency
- Add water if you want a creamier consistency
