INGREDIENTS

2 cups cheddar cheese

1/3 cup of feta

1/2 cup Falesca Pitted Green Castelvetrano Olives

1/2 cup Falesca Sun-Dried Tomatoes

1/2 cup Falesca Roasted Pepper Strips

1/2 cup green onions

1 egg

1 cup of milk

1/4 cup Colavita Mediterranean Extra Virgin Olive Oil

1 tbsp Colavita Roasted Garlic Paste

2 cups La Molisana "00" Flour

1 1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

Iliada Kalamata Extra Virgin Olive Oil Spray

INSTRUCTIONS

  1. Preheat the oven to 180°C/350°F
  2. Use the Iliada spray to coat the inside of 12 muffin tins
  3. Whisk dry ingredients in a bowl
  4. Whisk wet ingredients in a separate bowl
  5. Pour wet ingredients into the dry ingredients
  6. Add cheese, feta, sun-dried tomatoes, olives and green onion. Be careful not to overmix!
  7. Divide the batter into 12 muffin tins
  8. Bake for 25 minutes or until golden
  9. Cool for 10 minutes
