INGREDIENTS

4 tbsp unsalted butter

500g La Molisana Organic #54 Lumache Rigate

2 tsp Colavita Extra Virgin Truffle Oil

1/4 cup La Molisana "00" Flour

2 cups whole milk

1 cup half-and-half

1 1/2 cups shredded smoked Gouda

1 1/2 cups shredded cheddar cheese

2 tbsp grated Parmesan cheese

1/4 cup Italian seasoned breadcrumbs

1/2 tsp paprika

1/2 tsp mustard powder

salt and pepper to taste

INSTRUCTIONS

  1. Preheat oven to 375°F and grease a 9x13 inch baking dish
  2. Boil water and add pasta. Cook until not quite al dente
  3. Drain and transfer to a bowl. Drizzle truffle oil
  4. On medium-low heat melt butter. Then add flour, paprika, and mustard powder. Stir till roux forms
  5. Slowly whisk in milk and half in half. Then bring to a boil. Lower heat to a simmer and stir occasionally
  6. Remove from heat and add salt/pepper and 1 cup of both cheeses
  7. In a separate bowl mix breadcrumbs and remaining cheese
  8. Pour the cheese sauce over the pasta and transfer it to the baking dish. Sprinkle the breadcrumb mixture
  9. Bake for 25-30 min or until lightly browned
