Fregola Sarda is an artisanal pasta format originating in Sardinia made only with durum wheat semolina and water using the technique of "rubbing" semolina in a large clay bowl, where a mixture of water and saffron is sprayed (which gives the wonderful intense yellow color).
It is common to find it accompanied by clams and fresh tomatoes, but it has multiple applications. It can be used to replace rice with a risotto, in soups such as minestrone or even the filling of a chicken. In some houses it is served as a hot cereal for breakfast.
