Cavatelli belongs to the wider family of shapes obtained by dragging cylinders or very small sheets of pasta on a wooden pastry board. The numerous variants of this family depend essentially on how the dragging is performed, on the pressure exerted, and above all, on the number of fingers used. One finger for the cecatelli, two for the Molisani cavatelli, three for the cavatelli, and so on.
